Exchange has decades of enterprise features, deliverability history and an ecosystem; Citadel is a long-standing open groupware server; mailcow is a well-built, popular open mail stack. Elastbiz Mail is newer and less battle-tested. If your only need is a mature standalone mail server, those are strong choices.
